Chicken Jambalaya

INGREDIENTS
2 Tbsp. vegetable or canola oil  1/2 tsp. freshly ground black pepper
3-4 lbs. chicken pieces, rinsed and thoroughly dried 1/2 tsp. chili powder
4 cups chopped onion      1/4 tsp. cayenne pepper
3/4 cup chopped green pepper  1/4 tsp. dried thyme
3/4 cup chopped scallion (green tops only)                              1/4 tsp. dried basil
1 Tbsp. minced garlic        1/8 tsp. mace
3 Tbsp. minced fresh parsley            1/8 tsp. cloves
1/2 cup finely chopped lean baked ham     1 1/2 cup long grain white rice, rinsed thoroughly
5 Polish or French garlic sausages, sliced thin                         3 cups water
3 1/2 tsp. salt

In a 7- to 8-quart heavy bottom pot, heat the oil over high heat and brown the chicken, turning frequently to ensure even browning. Remove chicken to a large platter.

Add all vegetables, parsley, ham, and pork to the pot. Reduce heat to medium and cook, stirring frequently, for about 15 minutes until vegetables and meat are browned.

Add sausage and seaonings and cook for 5 minutes more. Add chicken parts, rice, and water. Mix gently.

Raise heat to high and bring to a boil, then lower heat to low setting and cover. Cook for 45 minutes, stirring occasionally. For the last 10 minutes of cooking time, remove the cover and stir frequently as the rice dries out. Serve immediately.
